Falafel Preparation

    Soak Chickpeas

    Place the dried chickpeas in a large bowl and cover with water. Soak overnight or for at least 8 hours until they double in size.

    Prepare Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and pepper. Pulse until coarsely ground but not pureed. Transfer to a bowl and mix in flour until combined.

    Shape Falafel Balls

    Using wet hands, form the mixture into small balls or patties, about 1.5 inches in diameter.

    Heat Oil

    In a deep pot or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry Falafel

    Carefully add the falafel balls to the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Tahini Sauce Preparation

    Mix Ingredients

    In a bowl, whisk together tahini, lemon juice, minced garlic, water, and salt until smooth and creamy. Adjust water to reach desired consistency.
