Prepare the Marinade
In a large bowl, combine olive oil, soy sauce, honey, minced garlic, grated ginger, lime juice, salt, black pepper, and paprika. Whisk until well blended.

Marinate the Chicken
Cut the boneless chicken breasts into 1-inch cubes. Add the chicken cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for best results.

Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
Grilling

Preheat the Grill
Preheat your grill to medium-high heat (about 400°F or 200°C).

Assemble the Skewers
Remove the chicken from the marinade and thread the cubes onto the skewers, leaving a little space between each piece for even cooking.
