Sweet Sauce

Method

Plantains

  1. 1

    Prepare the Plantains

Peel the ripe plantains by cutting off both ends and making a lengthwise slit through the skin. Remove the skin carefully.

  2. 2

    Slice the Plantains

Slice the plantains diagonally into 1-inch thick pieces.

  3. 3

    Heat the Oil

In a large skillet, heat the vegetable oil over medium heat until hot but not smoking.

  4. 4

    Fry the Plantains

Carefully add the sliced plantains to the hot oil, frying in batches if necessary to avoid overcrowding. Fry for about 2-3 minutes on each side or until golden brown.

  5. 5

    Drain and Season

Using a slotted spoon, transfer the fried plantains to a plate lined with paper towels to drain excess oil. Sprinkle with salt while still hot.

Sweet Sauce

  1. 6

    Make the Sauce

In a small saucepan, combine the brown sugar, water, vanilla extract, and cinnamon.

  2. 7

    Heat the Sauce

Bring the mixture to a simmer over medium heat, stirring continuously until the sugar dissolves completely.

  3. 8

    Thicken the Sauce

Allow the sauce to simmer for about 5-7 minutes or until it thickens slightly. Remove from heat and let it cool slightly.
