Method

Preparation of Fruits

  1. 1

    Soak Dried Fruits and Nuts

In a large bowl, combine the dried fruits mix, pitted prunes, and mixed nuts. Pour the dark rum over the mixture, ensuring all the fruits and nuts are well coated. Cover the bowl and let it soak for at least 24 hours, or up to a week for enhanced flavor.

Baking the Cake

  1. 2

    Preheat Oven

Preheat your oven to 300°F (150°C) and grease a 9-inch round cake pan or line it with parchment paper.

  2. 3

    Mix Dry Ingredients

In a medium bowl, sift together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, and salt. Set aside.

  3. 4

    Cream Butter and Sugars

In a large mixing bowl, cream the unsalted butter, brown sugar, and granulated sugar together until light and fluffy, approximately 5 minutes.

  4. 5

    Add Eggs and Extracts

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and almond extract until combined.

  5. 6

    Combine Mixtures

Gradually add the dry ingredients to the butter mixture, mixing until just combined. Fold in the soaked fruits and nuts, ensuring they are evenly distributed throughout the batter.

  6. 7

    Bake the Cake

Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for about 1.5 to 2 hours, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.

Decoration

  1. 8

    Decorate the Cake

Once the cake is completely cooled, cover it with marzipan and then with royal icing. Decorate with candied fruits as desired. Allow the icing to set before serving.
