Vegan Drumsticks

Method

Vegan Drumsticks Preparation

1

Prepare Jackfruit

Drain and rinse the canned jackfruit. Remove the seeds and shred the jackfruit using your fingers or a fork until it resembles pulled meat.

2

Make the Batter

In a bowl, combine the all-purpose flour, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well. Gradually add the plant-based milk until you reach a smooth batter consistency.

3

Coat the Jackfruit

Dip the shredded jackfruit into the batter, ensuring it is fully coated. Allow any excess batter to drip off.

4

Coat with Breadcrumbs

Place the coated jackfruit into a bowl of breadcrumbs. Roll and press it gently to ensure an even coating.

5

Fry the Drumsticks

In a large skillet, heat cooking oil over medium heat. Once hot, carefully add the coated jackfruit. Fry until golden brown and crispy, about 4-5 minutes on each side. Remove and drain on paper towels.

Sides Preparation

6

Prepare Quinoa

Rinse the quinoa under cold water. In a pot, add the rinsed quinoa and double the amount of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Fluff with a fork.

7

Steam Broccoli

In a steamer basket, place the broccoli florets and steam for about 5-7 minutes until tender but still bright green.
