Fried Sweet Plantains

    Prepare the Plantains

    Peel the ripe plantains by cutting off the ends and making a lengthwise slit in the skin. Remove the skin carefully.

    Slice the Plantains

    Cut the plantains diagonally into thick slices, about 1/2 inch thick.

    Heat the Oil

    In a large frying pan, heat the vegetable oil over medium heat until hot.

    Fry the Plantains

    Carefully add the plantain slices to the hot oil. Fry until golden brown, about 2-3 minutes per side. Avoid overcrowding the pan; you may need to do this in batches.

    Drain and Season

    Remove the fried plantains from the oil and place them on a plate lined with paper towels to drain excess oil. Sprinkle with salt while still hot.

Tangy Sauce

    Mix the Sauce

    In a small bowl, combine the ketchup, lime juice, hot sauce, garlic powder, and black pepper. Stir well until all ingredients are fully incorporated.

    Taste and Adjust

    Taste the sauce and adjust seasoning if necessary. You can add more lime juice for tanginess or more hot sauce for heat.
