Prepare the Vegetables
Dice the onion, carrots, and celery into small pieces. Mince the garlic cloves.

Rinse the Split Peas
Rinse the split peas under cold water in a fine mesh strainer to remove any debris.

Combine Ingredients
Stir in the rinsed split peas, vegetable broth, bay leaf, thyme, salt, and black pepper. Bring the mixture to a boil.

Simmer the Soup
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes, or until the split peas are tender.

Blend (Optional)
If a smoother texture is desired, use an immersion blender to purée the soup until smooth, or blend in batches using a countertop blender.

Serve
Remove the bay leaf and ladle the soup into bowls. Serve hot with crusty bread, if desired.
