    Make the Marinade

    In a blender or food processor, combine the scotch bonnet peppers, green onions, garlic cloves, fresh thyme, ground allspice, ground cinnamon, brown sugar, soy sauce, vegetable oil, salt, black pepper, and lime juice. Blend until smooth.

    Marinate the Chicken

    Place the chicken pieces in a large bowl or a resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat (around 375°F to 400°F). Ensure the grill grates are clean and lightly oiled to prevent sticking.

    Grill the Chicken

    Remove the chicken from the marinade and allow any excess marinade to drip off. Place the chicken pieces on the grill. Grill for about 6-8 minutes per side, or until the internal temperature reaches 165°F and the chicken is nicely charred.

    Rest and Serve

    Once grilled, remove the chicken from the grill and let it rest for 5 minutes before serving. This allows the juices to redistribute. Serve hot with your choice of sides.
