Prepare the Fish
Start by cutting the fish fillets into small pieces, about 1 inch in size.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, cayenne pepper, salt, and black pepper. Mix well to combine.

Combine Wet Ingredients
In another bowl, whisk together the egg, chopped green onions, and chopped parsley until well combined.

Combine Mixtures
Gradually add the wet mixture to the dry mixture, stirring until just combined. Fold in the fish pieces gently, ensuring they are coated in the batter.

Heat Oil
In a large skillet or frying pan, heat the oil over medium heat until it reaches 180°C (350°F).

Fry the Fritters
Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry in batches, making sure not to overcrowd the pan. Cook for about 3-4 minutes on each side or until golden brown.

Drain and Serve
Once cooked, remove the fritters from the oil and place them on paper towels to drain excess oil. Keep warm until all fritters are cooked.

In a small bowl, combine the mayonnaise, lemon juice, hot sauce, and minced garlic. Mix well until smooth.

Add salt to the dipping sauce to taste, mixing until well combined.
