Peel the Plantains
Using a sharp knife, cut off both ends of each plantain. Make a shallow cut along the length of the plantain and carefully peel away the skin.

Slice the Plantains
Once peeled, slice the plantains diagonally into approximately 1-inch thick slices. This will help them fry evenly and provide a larger surface area for caramelization.

Heat the Oil
In a large skillet or frying pan, pour in the vegetable oil and place it over medium heat. Allow the oil to heat up until it shimmers, but is not smoking.

Fry the Plantains
Carefully add the sliced plantains to the hot oil in a single layer. Fry them for about 2-3 minutes on each side, or until they are golden brown and caramelized. Make sure not to overcrowd the pan.

Drain and Season
Using a slotted spoon, remove the fried plantains from the oil and place them on a plate lined with paper towels to drain excess oil. Sprinkle with salt to taste while they are still hot.
