Spice Blend
Main Ingredients
Prepare the Spice Blend
1. Combine Spices
In a small bowl, mix together allspice, cinnamon, nutmeg, thyme, black pepper, salt, and brown sugar until well combined.
Marinate the Chicken
2. Create Marinade
In a large bowl, combine minced garlic, grated ginger, chopped scotch bonnet pepper, lime juice, and vegetable oil.
3. Add Spice Blend
Stir in the prepared spice blend into the marinade until fully incorporated.
4. Marinate Chicken
Add chicken thighs to the marinade and coat thoroughly. Cover and let marinate in the refrigerator for at least 2 hours, or overnight for best results.
Cook the Chicken
5. Preheat Oven
Preheat your oven to 400°F (200°C).
6. Prepare Baking Tray
Line a baking tray with aluminum foil for easy cleanup and place a wire rack on top.
7. Arrange Chicken
Remove chicken from the marinade, allowing excess to drip off. Place the chicken on the wire rack in the baking tray.
8. Bake Chicken
Bake in the preheated oven for 35-40 minutes or until the chicken is cooked through and the skin is crispy.
9. Garnish and Serve
Once cooked, remove from the oven, and garnish with sliced green onions and bell pepper. Serve hot.
