1. Marinate the Chicken

In a large bowl, combine buttermilk and hot sauce. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

In a separate bowl, mix the flour, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper. Ensure the mixture is well combined.

In a large, heavy-bottomed pot or deep fryer, pour in the vegetable oil and heat to 350°F (175°C). Use a thermometer to ensure the temperature is accurate.

4. Coat the Chicken

Remove the chicken pieces from the marinade, letting the excess buttermilk drip off. Dredge each piece in the seasoned flour, shaking off any excess flour.

5. Fry the Chicken

Carefully place the coated chicken pieces into the hot oil, working in batches to avoid overcrowding. Fry for about 12-15 minutes, turning occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).

6. Drain and Serve

Once cooked, remove the chicken from the oil and place on a wire rack or paper towels to drain excess oil. Serve hot.
