Prepare the Plantains
Peel the green plantains by cutting off the ends and making a slit along the length of the plantain. Remove the skin carefully.

Slice the Plantains
Using a mandoline or a sharp knife, slice the plantains evenly into thin rounds (about 1/8 inch thick) for maximum crispiness.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping in a slice of plantain; it should sizzle immediately.

Fry the Plantains
Carefully add the sliced plantains in batches, ensuring not to overcrowd the pan. Fry them for about 3-4 minutes or until golden brown and crispy.

Drain and Season
Remove the fried plantains with a slotted spoon and place them on paper towels to drain excess oil. Sprinkle with salt while they're still hot.

Mix the Ingredients
In a medium bowl, combine the mayonnaise, Sriracha sauce, lime juice, garlic powder, and salt. Stir well until all ingredients are fully incorporated.

Adjust Flavor
Taste the dipping sauce and adjust the seasoning by adding more Sriracha for spice or more salt if needed.

Transfer the dipping sauce to a small serving bowl and serve alongside the crispy plantain chips.
