Fried Plantains
Dipping Sauce
Method
Preparing the Plantains
- 1
Peel the Plantains
Using a sharp knife, carefully cut off the ends of each ripe plantain. Make a shallow lengthwise cut in the skin and gently peel it off. Cut the plantains into diagonal slices about 1/2 inch thick.
- 2
Heat the Oil
In a large skillet, pour in the vegetable oil and heat it over medium heat until it shimmers. You can test if the oil is hot enough by dropping a small piece of plantain into it; it should sizzle immediately.
- 3
Fry the Plantains
Once the oil is hot, carefully add the sliced plantains in a single layer, making sure not to overcrowd the pan. Fry them for about 2-3 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to remove the fried plantains and place them on a paper towel-lined plate to drain excess oil.
- 4
Season the Plantains
While the plantains are still hot, sprinkle them with salt to taste.
Making the Dipping Sauce
- 5
Combine Ingredients
In a small bowl, combine the mayonnaise, ketchup, hot sauce, and lime juice. Mix well until all ingredients are thoroughly combined.
- 6
Adjust Seasoning
Taste the dipping sauce and adjust the hot sauce or lime juice according to your preference.
