Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Pan
In a 9-inch round cake pan, melt 1 cup of unsalted butter over low heat. Once melted, remove from heat and sprinkle 1 cup of brown sugar evenly over the melted butter.

Arrange Pineapple
Drain the can of pineapple slices and arrange them in a single layer over the brown sugar mixture. Place a maraschino cherry in the center of each pineapple slice.

Mix Dry Ingredients
In a large mixing bowl, combine 1.5 cups of all-purpose flour, 1 cup of granulated sugar, 2 tsp of baking powder, and 0.5 tsp of salt. Whisk together until well combined.

Combine Ingredients
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Pour Batter
Gently pour the cake batter over the arranged pineapples in the cake pan.

Bake the Cake
Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes.

Run a knife around the edges of the pan to loosen the cake, then carefully invert it onto a serving platter. Let it cool completely before serving.
