Prepare the Chicken
Season the chicken thighs with salt, black pepper, and allspice. Allow marinating for at least 30 minutes.

Sear the Chicken
In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the seasoned chicken thighs skin-side down and sear until golden brown, about 5-7 minutes. Flip and sear the other side for another 5 minutes. Remove from pot and set aside.

Combine Ingredients
Add the diced tomatoes, chicken broth, thyme, and the whole scotch bonnet pepper to the pot. Stir to combine.

Return the seared chicken to the pot, ensuring it's submerged in the broth. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30-35 minutes, or until chicken is cooked through and tender.
