Main Ingredients

Method

Preparation

  1. 1

    Prepare the Chicken

Season the chicken thighs with salt, black pepper, and allspice. Allow marinating for at least 30 minutes.

  2. 2

    Chop the Vegetables

Dice the onion, bell pepper, and tomatoes. Mince the garlic and slice the carrots.

Cooking

  1. 3

    Sear the Chicken

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the seasoned chicken thighs skin-side down and sear until golden brown, about 5-7 minutes. Flip and sear the other side for another 5 minutes. Remove from pot and set aside.

  2. 4

    Sauté the Vegetables

In the same pot, add the onion and sauté for 2-3 minutes until translucent. Add the garlic, bell pepper, and carrots, cooking for another 3-4 minutes.

  3. 5

    Combine Ingredients

Add the diced tomatoes, chicken broth, thyme, and the whole scotch bonnet pepper to the pot. Stir to combine.

  4. 6

    Cook the Stew

Return the seared chicken to the pot, ensuring it's submerged in the broth. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30-35 minutes, or until chicken is cooked through and tender.

  5. 7

    Finish the Dish

Remove the scotch bonnet pepper (if you want less heat) and stir in the chopped green onions before serving.
