Preparation of Fish

Clean and Season the Fish
Rinse the whole fish under cold water and pat dry with paper towels. Make three diagonal cuts on each side of the fish and season inside and out with salt and black pepper.

Dredge in Flour
Coat the seasoned fish in all-purpose flour, ensuring an even layer on both sides. Shake off excess flour.
Frying the Fish

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until hot but not smoking.

Fry the Fish
Carefully place the coated fish in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Making the Escovitch Sauce

Cook the Sauce
Bring the mixture to a boil over medium heat. Reduce the heat and simmer for about 5 minutes to allow flavors to meld. Remove from heat.
Serving

Plate the Fish
Place the fried fish on a serving platter. Pour the hot escovitch sauce over the fish, making sure to include the vegetables.

Garnish and Serve
Garnish with additional thyme if desired. Serve immediately with rice or festival.
