    Marinate the Goat

    In a large bowl, combine the goat meat with curry powder, allspice, thyme, salt, and black pepper. Mix well to ensure the meat is evenly coated. Cover and let marinate for at least 1 hour, preferably overnight in the refrigerator.

    Prepare Vegetables

    While the meat is marinating, chop the onion, green bell pepper, and slice the carrots and potatoes. Set aside.

    Brown the Goat

    In a large pot, heat a little oil over medium-high heat. Add the marinated goat meat in batches, browning on all sides. Remove the browned meat and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, garlic, and ginger. Sauté until the onion is translucent and fragrant, about 3-5 minutes.

    Combine Ingredients

    Add the browned goat meat back to the pot along with the green bell pepper, carrots, potatoes, coconut milk, water, and the whole scotch bonnet pepper. Stir well to combine.

    Simmer the Curry

    Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 1.5 to 2 hours, or until the goat meat is tender. Stir occasionally and adjust seasoning if necessary.

    Serve

    Once the goat is tender, remove the scotch bonnet pepper. Serve the curry goat hot, preferably with rice or flatbread.
