    Prepare the Steak

    In a small bowl, mix together the espresso powder, brown sugar, paprika, garlic powder, salt, and black pepper. Rub this mixture all over the New York strip steaks. Let them sit at room temperature for 30 minutes.

    Cook the Potatoes

    While the steak is resting, peel and chop the potatoes into quarters. Boil them in salted water for about 15-20 minutes or until fork-tender. Drain and return to the pot.

    Make Crispy Mashed Potatoes

    Add butter and heavy cream to the drained potatoes. Mash until smooth, then season with salt and pepper. Preheat your oven to 400°F (200°C). Spread the mashed potatoes on a baking sheet and bake for about 15 minutes until crispy on top.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Sear the rubbed steaks for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Let the steaks rest for 5 minutes before slicing.

    Slice the steaks against the grain and serve them topped with chimichurri sauce alongside the crispy mashed potatoes.
