    Prepare the Crust

    Preheat the oven to 350°F (175°C). In a food processor, crush the Oreo cookies into fine crumbs. Melt the unsalted butter and mix it with the cookie crumbs until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove from the oven and let cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese until smooth and creamy. Slowly add the Baileys Irish Cream, granulated sugar, and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed until just incorporated. Finally, fold in the sour cream until smooth.

    Bake the Cheesecake

    Pour the cheesecake filling into the cooled Oreo crust. Bake in the preheated oven for 50-60 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake sit in the oven for 1 hour with the door ajar.

    Chill and Serve

    Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving. Carefully remove the sides of the springform pan and slice to serve. Enjoy your Baileys cheesecake!
