Whipped Goat Cheese and Honey

In a large mixing bowl, combine the smoked salmon, mashed potatoes, egg, chopped dill, salt, and black pepper. Mix until well combined.

Prepare the Croquette Mixture

Take a small amount of the mixture and shape it into a small ball or patty. Repeat until all the mixture is used.

Roll each croquette in breadcrumbs until fully coated.

Heat oil in a frying pan over medium heat. Fry the croquettes in batches until golden brown on all sides, about 3-4 minutes per side.

Preheat the oven to 375°F (190°C). Cut wonton wrappers into triangles and place them on a baking sheet. Bake for 8-10 minutes until golden and crispy.

Prepare the Wontons

In a small bowl, whisk together the miso paste, rice vinegar, sesame oil, honey or maple syrup, and water until smooth. Season with salt to taste.

Make the Miso Vinaigrette

In a large bowl, combine artisan greens and cucumber slices. Drizzle with the miso vinaigrette and toss gently to combine.

Assemble the Salad

Top the salad with crispy wontons, toasted sesame seeds, and crispy shallots.

In a small bowl, mix together the espresso powder, brown sugar, paprika, garlic powder, salt, and black pepper. Rub this mixture all over the New York strip steaks. Let them sit at room temperature for 30 minutes.

Prepare the Steak

While the steak is resting, peel and chop the potatoes into quarters. Boil them in salted water for about 15-20 minutes or until fork-tender. Drain and return to the pot.

Cook the Potatoes

Add butter and heavy cream to the drained potatoes. Mash until smooth, then season with salt and pepper. Preheat your oven to 400°F (200°C). Spread the mashed potatoes on a baking sheet and bake for about 15 minutes until crispy on top.

Heat olive oil in a skillet over medium-high heat. Sear the rubbed steaks for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Let the steaks rest for 5 minutes before slicing.

Slice the steaks against the grain and serve them topped with chimichurri sauce alongside the crispy mashed potatoes.

Preheat the oven to 350°F (175°C). In a food processor, crush the Oreo cookies into fine crumbs. Melt the unsalted butter and mix it with the cookie crumbs until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove from the oven and let cool.

Prepare the Crust

In a large mixing bowl, beat the cream cheese until smooth and creamy. Slowly add the Baileys Irish Cream, granulated sugar, and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed until just incorporated. Finally, fold in the sour cream until smooth.

Make the Cheesecake Filling

Pour the cheesecake filling into the cooled Oreo crust. Bake in the preheated oven for 50-60 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake sit in the oven for 1 hour with the door ajar.

Bake the Cheesecake

Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving. Carefully remove the sides of the springform pan and slice to serve. Enjoy your Baileys cheesecake!
