Jalapeno Preparation

Prepare the Jalapenos
Preheat your oven to 400°F (200°C). Wearing gloves, slice the jalapenos in half lengthwise and remove the seeds and membranes to reduce heat.

Make the Cheese Filling
In a mixing bowl, combine cream cheese, cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined and smooth.

Stuff the Jalapenos
Using a spoon or a piping bag, generously fill each jalapeno half with the cheese mixture, pressing it in to ensure it is packed tight.

Bread the Jalapenos
Dip each stuffed jalapeno in flour, making sure to coat it evenly. Next, dip it into the beaten eggs, and finally coat it with breadcrumbs, pressing gently to adhere.
Frying

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Jalapenos
Carefully add the breaded jalapenos to the hot oil, a few at a time to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per side.

Drain and Serve
Use a slotted spoon to remove the jalapeno poppers from the oil and place them on paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
