BBQ Pulled Pork Preparation

Prepare the Pork
Trim any excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a bowl, mix together smoked paprika, cumin, salt, and black pepper. Rub this mixture all over the pork chunks.

Cook the Pork
Place the pork in a slow cooker with chopped onion and minced garlic. Pour water over the top and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix in BBQ sauce to the shredded pork.

Warm Tortillas
Heat the large flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.

Assemble the Burritos
On each tortilla, spread a layer of refried beans, then add a scoop of cooked rice, followed by a generous portion of pulled pork, shredded cheese, jalapeños, and fresh cilantro.

Add Toppings
Drizzle sour cream on top and squeeze fresh lime juice over the filling.

Wrap the Burritos
Fold in the sides of the tortilla and roll it up tightly from the bottom to form a burrito. Repeat with all tortillas.

Serve
Cut the burritos in half and serve with extra lime wedges on the side.
