Method

Preparation

  1. 1

    Prepare the Ingredients

Wash and chop the spinach, zucchini, green bell pepper, and green onions. Mince the garlic.

Cooking

  1. 2

    Cook the Meats

In a large skillet, heat the olive oil over medium heat. Add the ground beef and ground pork. Cook until browned, about 5-7 minutes, breaking up the meat with a spatula.

  2. 3

    Add Vegetables

Once the meats are browned, add the minced garlic, chopped spinach, diced zucchini, diced green bell pepper, and sliced green onions to the skillet. Stir well and cook for another 5-7 minutes until the vegetables are tender.

  3. 4

    Add Beans and Seasonings

Stir in the cooked cannellini beans, ground cumin, salt, and black pepper. Mix everything well and let it simmer for an additional 5 minutes to allow the flavors to meld.

  4. 5

    Add Cheese

Remove the skillet from heat and sprinkle shredded mozzarella cheese over the top. Cover and let it sit for a few minutes until the cheese melts.

Serving

  1. 6

    Serve the Greenie Beanie

Spoon the mixture into bowls and serve warm. Enjoy your hearty Greenie Beanie!
