Method

Chips

  1. 1

    Prepare the Tortillas

Stack the corn tortillas and cut them into wedges, creating triangular pieces.

  2. 2

    Heat the Oil

In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  3. 3

    Fry the Chips

Carefully add the tortilla wedges to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

  4. 4

    Drain and Season

Remove the chips with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while still hot.

Salsa

  1. 5

    Chop the Ingredients

Finely chop the tomatoes, red onion, jalapeño (remove seeds for less heat), and garlic. Roughly chop the cilantro.

  2. 6

    Mix the Salsa

In a mixing bowl, combine the chopped tomatoes, red onion, jalapeño, cilantro, and garlic. Add lime juice, salt, and black pepper.

  3. 7

    Adjust Seasoning

Taste the salsa and adjust seasoning with more salt or lime juice if needed. Let it sit for at least 15 minutes to allow flavors to meld.
