    Prepare the Brisket

    Trim excess fat from the brisket, leaving a thin layer for flavor. Pat dry with paper towels.

    Make the Rub

    In a small bowl, mix together brown sugar, paprika, black pepper, salt, chili powder, and cumin. Rub this mixture all over the brisket, ensuring it's evenly coated.

    Chop Vegetables

    Dice the onions and mince the garlic.

Cooking

    Sear the Brisket

    In a large skillet, heat olive oil over medium-high heat. Add the brisket and sear on all sides until browned, about 3-4 minutes per side. Transfer the brisket to a slow cooker.

    Sauté the Vegetables

    In the same skillet, add the diced onions and minced garlic. Sauté until onions are translucent, about 5 minutes.

    Transfer the sautéed onions and garlic to the slow cooker. Pour in beef broth and add bay leaves.

    Cover the slow cooker and cook on low for 8-10 hours or on high for 4-5 hours, until the brisket is tender and easily pulls apart.

    Once done, remove the brisket from the slow cooker and let it rest for 15 minutes. Slice against the grain and serve with the juices from the cooker.
