Fish

Method

Preparation

  1. 1

    Prepare the Fish

Rinse the fish fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

  2. 2

    Prepare the Vegetables

Dice the onion, bell pepper, and tomatoes into small pieces. Mince the garlic and slice the green olives.

Cooking

  1. 3

    Sauté the Aromatics

In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes until they are softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

  2. 4

    Add Tomatoes and Seasonings

Stir in the diced tomatoes, green olives, capers, oregano, and cumin. Cook for about 5 minutes until the tomatoes start to break down and release their juices.

  3. 5

    Cook the Fish

Gently place the seasoned fish fillets into the skillet with the sauce. Spoon some of the sauce over the fish. Cover the skillet and cook for about 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.

Serving

  1. 6

    Finish and Serve

Once the fish is cooked, remove from heat. Squeeze fresh lime juice over the top and garnish with chopped cilantro. Serve warm with rice or tortillas.
