Preparation of Ingredients

    Prepare Vermicelli Noodles

    Cook the vermicelli noodles according to package instructions, usually by boiling them in water for about 3-4 minutes until soft. Drain and rinse under cold water. Set aside.

    Cook Shrimp

    In a saucepan, bring water to a boil. Add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Drain and let cool before slicing them in half lengthwise.

    Prepare Vegetables

    Julienne the carrot and cucumber. Wash and dry the mint and cilantro leaves. Shred the lettuce and set all the fillings aside.

Wrapping the Spring Rolls

    Soak Rice Paper

    Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes soft. Carefully remove it and let the excess water drip off.

    Assemble the Filling

    Place the softened rice paper on a flat surface. In the center, layer a few pieces of shrimp, a small amount of vermicelli noodles, mint, cilantro, shredded lettuce, carrot, and cucumber.

    Roll the Wrapper

    Fold the sides of the rice paper over the filling, then roll it away from you to enclose the filling completely. Repeat this process until all ingredients are used.
