Method
Crust Preparation
- 1
Make the crust
In a medium mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and stir until the mixture is well combined and resembles wet sand.
- 2
Press into the pan
Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan. Press the crumb mixture firmly into the bottom of the pan using the back of a measuring cup. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove from oven and let cool.
Filling Preparation
- 3
Prepare the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar and beat until fully incorporated.
- 4
Add eggs and passion fruit
Add the vanilla extract and eggs, one at a time, beating well after each addition. Finally, stir in the passion fruit pulp until evenly mixed.
- 5
Bake the filling
Pour the filling mixture over the cooled crust in the springform pan. Bake at 325°F (160°C) for 45-50 minutes or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake in the oven for an additional hour.
Topping Preparation
- 6
Prepare the topping
While the cheesecake cools, scoop the pulp from the halved passion fruits into a small bowl. Mix in the granulated sugar. Let it sit for about 10 minutes to allow the flavors to meld.
- 7
Serve the cheesecake
Once the cheesecake has cooled completely, carefully remove it from the springform pan. Spoon the passion fruit topping over the cheesecake just before serving.
