In a blender, combine ripe mangoes and blend until smooth. Measure out 2 cups of mango puree and set aside.

In a medium saucepan, whisk together the mango puree, coconut milk, sugar, cornstarch, vanilla extract, and lemon juice until well combined.

Cook the Mixture
Place the saucepan over medium heat and cook the mixture, stirring constantly, until it thickens and begins to bubble. This should take about 5-7 minutes.

Once thickened, remove from heat and pour the pudding into individual serving bowls or molds. Allow to cool at room temperature before refrigerating.
