Preparation

    Prepare the Noodles

    Cook the Chow Mein noodles according to the package instructions until al dente. Drain and rinse under cold water. Set aside.

    Marinate the Beef

    In a bowl, combine the sliced beef with soy sauce, cornstarch, and sesame oil. Mix well and let it marinate for at least 15 minutes.

    Prep the Vegetables

    Slice the bell pepper, julienne the carrot, chop the green onions, and mince the garlic and ginger.

Cooking

    Stir-fry the Beef

    In a large wok or frying pan, heat 2 tablespoons of vegetable oil over high heat. Add the marinated beef and stir-fry for 3-4 minutes until browned. Remove from the wok and set aside.

    Cook the Vegetables

    In the same wok, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger and stir-fry for about 30 seconds until fragrant. Then add sliced bell pepper, julienned carrot, and stir-fry for another 2-3 minutes.

    Combine Everything

    Add the bean sprouts and cooked noodles to the vegetables in the wok. Pour in the oyster sauce, soy sauce, chicken broth, and sugar. Mix well and cook for another 2 minutes.

    Finish with Beef and Green Onions

    Return the cooked beef to the wok, add the chopped green onions, and toss everything together. Stir-fry for an additional minute until heated through.
