Burger Preparation

    Prepare the Mushrooms

    In a skillet over medium heat, sauté the mushrooms with a pinch of salt and black pepper until they are browned and tender, about 5-7 minutes. Set aside.

    Prepare the Onions

    In the same skillet, add a little oil if needed, and fry the thinly sliced onion until crispy and golden brown. This should take about 5-6 minutes. Drain on paper towels.

    Cook the Burger

    Form the ground beef into two equal patties (1/2 lb each) and season each side with salt and black pepper. Heat a grill or skillet over medium-high heat and cook the patties for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Melt the Cheese

    In the last minute of cooking, place a slice of Tillamook cheese on each patty and cover to allow the cheese to melt.

    Assemble the Burger

    Toast the brioche buns if desired. Spread the black pepper aioli on the bottom bun, add the burger patty with melted cheese, top with sautéed mushrooms, crispy onions, and finally the top bun.

    Serve

    Serve with crispy fries on the side.
