    Prepare the Ingredients

    Clean and slice the mushrooms. Press and cube the Oshiro tofu. Mince the garlic and ginger. Chop the mixed vegetables into bite-sized pieces.

    Cook the Tofu

    In a non-stick skillet, heat a little oil over medium heat. Add the cubed Oshiro tofu and fry until golden and crispy on all sides. Remove and set aside.

    Sauté the Vegetables

    In the same skillet, add the minced garlic and ginger, sautéing for about 1 minute until fragrant. Then add the mixed vegetables and cook until tender, about 3-4 minutes.

    Cook the Noodles

    In a separate pot, boil water and cook the yakisoba noodles according to package instructions. Drain and set aside.

    Combine Everything

    Add the cooked yakisoba noodles to the skillet with vegetables. Pour in the kabayaki sauce and toss everything together until well combined. Finally, add the crispy Oshiro tofu and gently mix.

    Serve

    Serve the mushroom bowl hot, garnished with additional sliced green onions or sesame seeds if desired.
