Method

Making Ravioli Dough

    Prepare the Dough

    In a large bowl, mix the flour and salt. Make a well in the center and add the eggs and olive oil. Gradually mix until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Preparing the Spinach Filling

    Cook the Spinach

    In a skillet, sauté the spinach over medium heat until wilted. Remove from heat, let cool, and chop finely. In a bowl, mix the chopped spinach with ricotta, Parmesan, nutmeg, salt, and pepper.

Assembling Ravioli

    Roll and Fill

    Roll out the dough into thin sheets. Place small mounds of spinach filling on one sheet, then cover with another sheet. Cut into squares and seal edges with a fork.

Cooking Ravioli

    Boil the Ravioli

    Bring a large pot of salted water to a boil. Cook ravioli for about 3-5 minutes until they float. Drain and set aside.

Making Lemon Garlic Cream Sauce

    Prepare the Sauce

    In a saucepan, melt butter over medium heat. Add minced garlic and sauté for 1 minute. Pour in heavy cream, lemon juice, and zest. Season with salt and pepper and simmer for 5 minutes.

Seared Hawaiian Prawns

    Cook the Prawns

    In a skillet, heat olive oil over medium-high heat. Add garlic and sauté for 30 seconds. Add prawns, lemon juice, salt, and pepper. Cook until prawns are pink and cooked through, about 3-4 minutes.

Grilled Garlic Bread

    Prepare and Grill

    Mix softened butter with minced garlic and parsley. Spread on sliced baguette. Grill or toast until golden brown.

Serving

    Plate the Dish

    Serve the ravioli topped with lemon garlic cream sauce and seared prawns on the side. Accompany with grilled garlic bread.
