Chicken & Shrimp Angel Hair Pasta Recipe

    Prepare the Pasta

    Cook the angel hair pasta according to the package instructions until al dente. Drain and set aside.

    Grill the Vegetables

    In a grill pan or outdoor grill, heat 2 tablespoons of olive oil over medium heat. Add bell peppers and zucchini, season with salt and pepper, and grill for about 5-7 minutes, until tender. Remove from the grill and set aside.

    Cook the Chicken

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the chicken breast with salt and pepper, then cook for about 6-7 minutes on each side, or until fully cooked. Remove from skillet and let it rest before slicing.

    Cook the Shrimp

    In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 1 minute until fragrant, then add the shrimp. Cook for 2-3 minutes until the shrimp turn pink and are cooked through.

    Combine Ingredients

    Add the cherry tomatoes and grilled vegetables to the skillet with the shrimp. Stir in the cooked angel hair pasta and chopped basil. Toss everything together to combine and heat through for about 2 minutes.

    Plate the pasta mixture, top with sliced chicken breast, and garnish with additional basil if desired. Enjoy!
