    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Wash the baking potatoes thoroughly and pierce them several times with a fork. Rub with olive oil and sprinkle with salt. Bake for 45-60 minutes until tender.

    Make the Bearnaise Sauce

    In a small saucepan, combine white wine vinegar, chopped shallots, and tarragon. Simmer until reduced by half. Let cool slightly, then whisk in the egg yolks. Place over low heat, whisking constantly until thickened. Gradually add melted butter, whisking until smooth. Season with salt and pepper.

    Cook the Steak

    Season the NY strip with salt and pepper. Heat a cast-iron skillet or grill over high heat and add olive oil. Sear the steak for 4-5 minutes on each side for medium-rare, or until cooked to your liking. Let it rest for 5 minutes before slicing.

    Grill the Asparagus

    While the steak is resting, toss the asparagus with olive oil, salt, and pepper. Grill over medium heat for about 5-7 minutes until tender and slightly charred.

    Assemble the Loaded Baked Potato

    Once the potatoes are done, cut them open and fluff the insides with a fork. Add butter, sour cream, cheddar cheese, bacon bits, and chives.

    Plate the NY strip with grilled asparagus and loaded baked potato. Drizzle bearnaise sauce over the steak and enjoy!
