Prepare the Chimichurri Sauce
In a food processor, combine parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper. Pulse until well blended. Set aside.

Prepare the Garlic Mashed Potatoes
Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot. Add roasted garlic (sautéed in butter), milk, salt, and pepper. Mash until smooth and creamy.

Cook the NY Strip Steak
Season the NY Strip steak with blackening seasoning (or a mix of paprika, cayenne, garlic powder, onion powder, salt, and pepper). Grill over high heat for 4-5 minutes per side for medium-rare, adjusting time for desired doneness.

Blister the Cherry Tomatoes
In a skillet, heat olive oil over medium-high heat. Add cherry tomatoes and cook until they blister, about 5 minutes. Season with salt and pepper.

Plate the blackened NY Strip steak alongside garlic mashed potatoes and grilled asparagus. Top the steak with chimichurri sauce and serve blistered cherry tomatoes on the side.
