    Prepare the Garlic Mashed Potatoes

    In a pot, cover the cubed potatoes with water, add a pinch of salt, and bring to a boil. Cook until tender, about 15 minutes. Drain and return to the pot.

    Mashing the Potatoes

    Add butter, minced garlic, and milk to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

    Make the Coffee Rub

    Mix Ka’u coffee, salt, and black pepper in a small bowl. Rub this mixture generously over the NY Strip Steak.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Add the seasoned steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest for 5 minutes.

    Sauté the Mushrooms and Spinach

    In the same skillet, add sliced mushrooms and sauté for about 3-4 minutes until golden. Add spinach and cook until wilted. Season with salt and pepper.

    Serve

    Slice the rested steak and serve with a generous scoop of garlic mashed potatoes, topped with sautéed mushrooms and spinach, and garnished with crispy onions.
