Method

Prepare the Oysters

    Clean the Oysters

    Rinse the fresh oysters under cold running water to remove any sand or grit. Drain and set aside.

    Prepare the Breading Station

    In a shallow bowl, combine the all-purpose flour, cayenne pepper, salt, and black pepper. In another bowl, whisk together the eggs and milk. In a third bowl, place the cornmeal.

    Bread the Oysters

    Dip each oyster into the flour mixture, then into the egg mixture, and finally coat with cornmeal. Ensure each oyster is well coated.

Fry the Oysters

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Oysters

    Carefully add the breaded oysters in batches to the hot oil. Fry for about 2-3 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.

Prepare Weisenberger Grits

    Cook the Grits

    In a saucepan, bring the water and salt to a boil. Gradually stir in the Weisenberger grits. Reduce heat to low and cook for about 20-25 minutes, stirring occasionally until thickened.

    Finish with Butter

    Once the grits are cooked, stir in the butter until melted and well combined.

Make Country Ham Beurre Blanc

    Sauté Shallots

    In a saucepan over medium heat, add the diced shallots and cook until translucent, about 3-4 minutes.

    Add Wine and Reduce

    Pour in the white wine and bring to a simmer. Cook until the liquid is reduced by half.

    Add Cream and Ham

    Stir in the heavy cream and diced country ham, and cook for an additional 5 minutes.

    Finish with Butter

    Remove from heat and whisk in the unsalted butter until the sauce is smooth and creamy.

Assemble and Serve

    Plate the Dish

    On a plate, spoon a generous serving of Weisenberger grits, top with the crispy fried oysters, and drizzle the country ham beurre blanc over the top.

    Garnish

    Sprinkle sliced green onions over the dish for garnish and serve immediately.
