Cake Preparation
Melt Chocolate and Butter
In a double boiler or microwave, melt the dark chocolate and unsalted butter together until smooth. Stir occasionally to prevent burning. Remove from heat and let cool slightly.
Mix Ingredients
In a large mixing bowl, combine granulated sugar, eggs, and vanilla extract. Whisk until well blended. Gradually add the melted chocolate mixture, mixing until combined.
Add Dry Ingredients
Sift cocoa powder and salt into the chocolate mixture. Fold gently until just combined. Do not overmix.
Bake the Cake
Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and pour in the batter. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack.

In a saucepan, combine blood orange juice, granulated sugar, and white vinegar. Bring to a simmer over medium heat, stirring until the sugar dissolves.
Reduce the Sauce
Continue to simmer for about 15-20 minutes, or until the mixture thickens to a syrupy consistency. Remove from heat and let cool.

Make Ganache
Heat the heavy cream in a saucepan until it just begins to simmer. Remove from heat and add dark chocolate (for ganache). Let sit for a few minutes, then stir until smooth.

Segment Blood Oranges
Using a sharp knife, cut off the top and bottom of each blood orange. Stand the orange upright and slice down the sides to remove the peel. Over a bowl, cut between the membranes to release the segments.

Prepare Sugar Syrup
In a small saucepan, combine granulated sugar, water, and orange zest. Bring to a boil over medium heat, stirring until sugar dissolves. Reduce heat and simmer for 5 minutes.
Candy Twists
Preheat oven to 400°F (200°C). Roll out puff pastry and cut into thin strips. Dip each strip in the sugar syrup and twist. Place on a baking sheet lined with parchment paper and bake for 12-15 minutes until golden.
