Preparation

  1. 1

    Chop the Vegetables

Dice the carrots, celery, onion, and potatoes into small, even pieces. Mince the garlic cloves.

  2. 2

    Gather the Ingredients

Ensure you have all the ingredients ready: vegetable broth, water, thyme, bay leaves, salt, black pepper, olive oil, and fresh parsley.

Cooking

  1. 3

    Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced onions, carrots, celery, and sauté for about 5-7 minutes until they start to soften.

  2. 4

    Add Garlic

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

  3. 5

    Combine Liquids

Pour in the vegetable broth and water. Bring the mixture to a boil.

  4. 6

    Add Potatoes and Spices

Once boiling, add the diced potatoes, thyme, bay leaves, salt, and black pepper. Stir well to combine.

  5. 7

    Simmer the Soup

Reduce the heat to low and cover the pot. Let the soup simmer for 20-25 minutes, or until the potatoes are tender.

  6. 8

    Finish with Parsley

Remove the bay leaves, stir in the fresh parsley, and adjust seasoning if needed.
