Make the Base Syrup
In a saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar is fully dissolved. Once dissolved, remove from heat and let it cool completely.

Prepare the Fruit
While the syrup is cooling, wash and chop the fresh fruit into small pieces. If using strawberries or mangoes, you may want to puree them for a smoother texture.

In a large mixing bowl, combine the cooled syrup, fresh lemon juice, and prepared fruit. Stir well to ensure everything is mixed together evenly.
Freezing

Chill the Mixture
Pour the mixture into a shallow dish or a container. Place it in the freezer for about 1-2 hours, until the edges start to freeze.

Scrape and Freeze
After 1-2 hours, remove the container from the freezer and use a fork to scrape the mixture, breaking up any ice crystals. Return to the freezer and repeat this scraping process every 30 minutes until the sorbet is fully frozen and has a fluffy texture, usually taking about 4-6 hours.

Once the sorbet is fully frozen, scoop it into bowls or cones and serve immediately. Garnish with fresh fruit or mint leaves if desired.
