Preparation

    Prepare the Ingredients

    Preheat your oven to 400°F (200°C). Rinse the salmon fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

    Prepare the Garlic

    Peel the garlic cloves and lightly crush them. This will help release their flavor while roasting.

    Prepare the Leeks

    Trim the ends of the leeks and slice them thinly. Rinse thoroughly to remove any dirt or grit.

    Prepare the Rapini

    Wash the rapini under cold water and trim off any tough stems. Blanch in boiling water for 2 minutes, then plunge into ice water to stop the cooking process. Drain and set aside.

    Prepare the Sundried Tomatoes

    If using dry sundried tomatoes, soak them in warm water for 15 minutes to soften. Chop into smaller pieces after soaking.

    Prep the Basil

    Wash the basil leaves and pat them dry. Chiffonade the basil by stacking the leaves, rolling them tightly, and slicing thinly.

Cooking

    Sauté Leeks and Garlic

    In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced leeks and crushed garlic cloves. Sauté for about 5 minutes until the leeks are soft and fragrant.

    Add Butter Beans and Sundried Tomatoes

    Stir in the butter beans and sundried tomatoes, cooking for an additional 3-4 minutes until heated through.

    Add Rapini

    Add the blanched rapini to the skillet, mixing everything together. Drizzle with lemon juice and season with salt and pepper.

    Prepare Salmon

    Push the vegetable mixture to the sides of the skillet to create space for the salmon fillets in the center. Place the salmon fillets skin-side down in the skillet.

    Add Butter

    Dot the salmon with the remaining 2 tablespoons of butter on top and drizzle with a bit more olive oil.

    Roast in Oven

    Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

    Garnish and Serve

    Remove from the oven, sprinkle fresh basil over the dish, and serve immediately. Enjoy your roasted salmon with creamy butter beans and vegetables!
