Preparation of Chicken

Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.

Coat the Chicken
First, dip each seasoned chicken breast in the flour, shaking off any excess. Then, dip it into the beaten eggs, and finally coat it with the grated Parmesan cheese.
Cooking the Chicken

Heat the Oil
In a large skillet, heat the olive oil over medium-high heat.

Fry the Chicken
Once the oil is hot, add the coated chicken breasts. Cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove from skillet and drain on paper towels.
Making the Boursin Spread

Mix the Ingredients
In a bowl, combine the cream cheese, minced garlic, chopped herbs, and lemon juice. Mix until smooth and well combined.
Assembling the Sandwich

Prepare the Ciabatta
Slice the ciabatta bread in half horizontally.

Spread the Boursin
Spread a generous amount of the garlic herb Boursin on the bottom half of each ciabatta.

Add Chicken and Toppings
Place the fried chicken breast on top of the Boursin spread. Top with sliced piquillo peppers and a handful of baby arugula.

Place the top half of the ciabatta on the sandwich and press down gently.
