Prepare the Lobster Filling

    Cook the Lobster

    In a medium saucepan, melt 4 tablespoons of unsalted butter over medium heat. Add the lobster tails and cook for about 5-7 minutes until they turn bright red and are cooked through. Remove from heat and let cool.

    Extract Lobster Meat

    Once cool, carefully remove the meat from the lobster tails. Chop the lobster meat into bite-sized pieces and set aside.

    Mix Ingredients

    In a mixing bowl, combine the chopped lobster meat, crème fraîche, lemon juice, chives, parsley, salt, and pepper. Gently fold until the lobster is well coated. Adjust seasoning as necessary.

Prepare the Brioche Rolls

    Toast the Rolls

    In a skillet, melt 2 tablespoons of unsalted butter over medium heat. Place brioche rolls cut side down in the skillet and toast until golden brown, about 2-3 minutes.

    Assemble the Rolls

    Remove the toasted brioche rolls from the skillet and fill each roll generously with the lobster filling. Serve immediately.
