Method

For the Grilled Salmon

  1. 1

    Marinate the Salmon

In a large bowl, whisk together olive oil, lemon juice, minced garlic, dried dill, salt, and black pepper. Add the salmon fillets and coat them well with the marinade. Cover and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat, approximately 375°F (190°C). Make sure the grill grates are clean and lightly oiled to prevent sticking.

  3. 3

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 6-8 minutes on each side, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

For the Seasonal Vegetables

  1. 4

    Prepare the Vegetables

In a large bowl, combine sliced zucchini, bell peppers, and asparagus. Drizzle with olive oil and season with salt and black pepper. Toss until the vegetables are evenly coated.

  2. 5

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
