Prepare the Tomatoes
Slice the green tomatoes into 1/4-inch thick rounds. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture.
Set up Dredging Station
In three separate bowls, place the flour, buttermilk, and cornmeal mixed with black pepper and cayenne pepper.
Dredge the Tomatoes
Dip each tomato slice first in the flour, shaking off excess, then in the buttermilk, and finally coat in the cornmeal mixture.
Fry the Tomatoes
In a large skillet, heat the vegetable oil over medium-high heat. Fry the tomatoes in batches, about 3-4 minutes per side, until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
Goat Cheese Topping
Prepare the Goat Cheese
In a small bowl, mix the goat cheese with honey and fresh thyme until smooth and well combined.
Spicy Remoulade
Make the Remoulade
In a medium bowl, combine mayonnaise, Dijon mustard, hot sauce, capers, lemon juice, paprika, and salt. Mix until smooth and well blended.
