Preparing the Filet Mignon

    Season the Steak

    Pat the filet mignon pieces dry with paper towels. Rub both sides of the steaks with olive oil, then season generously with salt and black pepper.

    Prepare Garlic and Rosemary

    Mince the garlic cloves and set aside. Get the fresh rosemary sprigs ready for cooking.

Cooking the Filet Mignon

    Preheat the Pan

    Heat a cast-iron skillet or frying pan over medium-high heat until it's very hot.

    Sear the Steaks

    Add the seasoned filet mignon to the hot skillet. Sear for 4-5 minutes on one side until a brown crust forms.

    Flip and Add Aromatics

    Flip the steaks and add the minced garlic and rosemary to the skillet. Sear for another 4-5 minutes for medium-rare.

    Check the Temperature

    Use a meat thermometer to check for doneness. Aim for 130°F (54°C) for medium-rare.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes before serving.

    Cook Asparagus

    In the same skillet, after removing the steaks, add the asparagus and sauté in the remaining juices for about 4-5 minutes until tender.

    Prepare Mashed Potatoes

    Prepare mashed potatoes according to your favorite recipe or use pre-made, and serve alongside the filet mignon.
