Croque Monsieur Recipe

Prepare the Cheeses
Slice the brie cheese into thin pieces. Grate the fontina and gruyere cheeses. Set aside.

Prepare the Meats
Slice the prosciutto, speck, and country ham into manageable pieces for layering.
Bread Assembly

Assemble the Sandwich
Spread dijonnaise on one side of each slice of pullman loaf. Layer the cheeses and meats on the non-spread side of two slices, starting with brie, followed by fontina, then gruyere, and finally the meats. Top with the other two slices of bread, spread side up.

Finish the Croque Monsieur
Once the sandwiches are toasted, place them on a baking sheet. Pour the mornay sauce over the top of each sandwich and place under the broiler for 2-3 minutes, until bubbly and golden.
