Fruit Filling Preparation

    Prepare the Fruit

    Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the seasonal fruits with granulated sugar, lemon juice, cornstarch, and ground cinnamon. Toss until the fruits are evenly coated.

    Transfer to Baking Dish

    Pour the fruit mixture into a greased 9x13 inch baking dish, spreading it out evenly.

Biscuit Topping Preparation

    Mix Dry Ingredients

    In a separate bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt.

    Cut in Butter

    Add the chilled, cubed butter to the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

    Add Wet Ingredients

    Stir in the milk and vanilla extract until just combined. Be careful not to over-mix.

    Top the Fruit Mixture

    Spoon the biscuit topping over the fruit filling, spreading it out evenly but allowing some fruit to show through.

Baking and Serving

    Bake the Cobbler

    Bake in the preheated oven for 35-40 minutes, or until the biscuit topping is golden brown and the fruit is bubbling.
